VEGAN TATER BLOBS – AKA TATER TOTS!
So my son, brought me these delicious little potato balls the other day, that he created all on his own. He really is becoming a great little chef. He said they were “Tater Tots.” But they looked more like blobs to me. 😉
Ingredients:
Yukon Gold Potatoes
Seasoning of your choice (he used Mrs. Dash)
Oil of your choice (he used Coconut oil)
Directions:
Wash and dry potatoes. Shread the potatoes into a bowl and add seasoning and a smidgen of oil Roll potatoes into balls. Place in oiled skillet and cook just until browned. Place on foiled baking sheet and bake for 10 minutes at 375F.

How old is this kid? Sounds good! Really just like mini hashbrowns, but from a kid? Impressive.
