Just a quick post today.. I had someone ask me if my kid ate a lot of PBJ’s since he is Vegan… WHAT?? I composed myself, before I answered. You know those people you run into that seem to think that being vegan means, you get to eat tofu and cardboard and apparently PBJ is your strict daily lunch menu. Come on people!! Seriously!?
Yes, of course, vegan kids eat sandwiches that are not always PBJ’s. My son is allergic to peanuts, as you may know, so he has never had one of those delightful handfuls of peanut scrumptiousness. Of course, that’s a word. Anyway…he does indulge in an occasional Almond Butter and Jelly. But he prefers much more variety in his sandwiches and some he has concocted could be described as an absolute delicacy. Well, here are just a few of the ones we have had this past week or so.

- Ezekiel Bread with Romaine, Onion, Red Pepper, Avocado and Tomato served with Sweet Potato Fries!
- Open Faced Sandwich with Ezekiel Bread with Avocado, Romaine, Cucumber, Onion and Red Pepper.
- Rudi’s Bread with Avocado, Bib Lettuce, Cucumber, Bean Sprouts, Coleslaw and Red Pepper with Raspberries.
