VEGAN EGG SUBSTITUTES

We have all been there.  We find a delicious recipe and run down the list of ingredients and there it is EGGS!  UGH!  Now what?  Then we have to scour the internet for egg substitutes or worse, buy a box of egg replacer just we can prepare this particular delicacy.  Well, not anymore.  I have compiled a list for you.  Come back whenever you are in need of a reminder.

EGG REPLACERS – Each item below replaces 1 egg in a recipe.

  1. Bananas – 1 ripe, mashed well
  2. Vinegar/Baking Soda – 1 Tablespoon of vinegar with 1 teaspoon of baking soda
  3. Avocado – about 2Tablespoon mashed well
  4. Peanut Butter/Nut Butter – 3 Tablespoon
  5. Cornstarch/water – 1 Tablespoon Cornstarch with 3 Tablespoons water
  6. Coconut milk – Mix 2 Tablespoons plus 2 teaspoons full fat coconut milk with 1 teaspoon baking powder.
  7. Flax/water – Mix 1 Tablespoon ground flax seeds with 3 Tablespoons hot water, set aside for 3 minutes to thicken.
  8. Carbonated water: Replace 1/4 cup of the recipe’s liquid with carbonated water/soda for each egg removed.
  9. AgarAgar/water – 1 Tablespoon of agar agar powder with 1 Tablespoon of water; whip, chill and whip again
  10. Tofu – 1/4 cup silken tofu
  11. Aquafaba – 3 Tablespoons of liquid from a can of chickpeas
  12. Chia/water – Mix 1 Tablespoon ground chia seed with 1/3 cup water and let sit for 15 minutes to thicken.
  13. Applesauce/Pumpkin/Pureed Fruit – 1/4 cup pureed fruit. (Other options include pears, prunes, sweet potato,pineapple and beets)

*for egg whites – try using the water left in a can of chickpeas/garbanzo beans, you will be pleasantly surprised.

The egg substitute that you choose will be determined by the type of recipe you are preparing.  

Some items will give off more flavor in your recipe than others.  Bananas are dead give away when you use them, while applesauce and flax do not add to the flavor at all.  Avocado adds more thickness to the texture than chia or bananas or applesauce.
