I hope to do more of these copycat meals.  They are so fun… maybe Chipotle, so stay tuned.

Besides Chipotle, Genghis Grill is one of my son’s favorite restaurants to visit.  And when I came across these UDON noodles, I figured it would be easy to copy that flavor he loves.  

And, of course, it was!

VEGAN Mongolian Meal

Ingredients:

1 pkg UDON Brown Rice Noodles
1 pkg frozen broccoli (or cut some fresh ones)
1/2 pkg sliced button mushrooms
1 pkg shredded carrots
1 can pineapple (chunks or tidbits)
1 can water chestnuts
Sunflower oil for sauteing.

(add any other veggies/fruits that you like)

Directions:
Cook your noodles per package directions.  Saute your veggies/fruit in a bit of sunflower oil until tender and done, to your preference.  Drizzle on the Island Teriyaki Sauce.  Enjoy!! 

Genghis Grill Copycat – Island Teriyaki Sauce

Ingredients:

1/2 C. Soy Sauce (or Coconut Aminos)
1/2 C. Palm Sugar
1/8 C. Pineapple Juice
1-2 T. Ground Ginger
1-2 T. Garlic Powder
1/8 C. White Vinegar
1-2 T. Lime Juice

Mix them all together. Add more or less for your personal taste. 

*I used this “soy sauce
