If you loved VEGAN Pancakes I, then you will die for these VEGAN Pancakes II.  This was his next attempt at pancakes.  Super easy, and so tasty…..MMMMM!!!

Vegan Pancakes II
1 1/4 C Flour
2 t Baking powder
3 T Sugar (we use palm sugar)
1/2 t Salt

1  1/4 C Buttermilk {add 1-2 T vinegar to vegan milk and set aside for about 5 min}
2 T Oil
1 Banana smashed

In a small bowl combine flour, baking powder, sugar and salt.  In a separate bowl, mash up your banana and add your oil and buttermilk and mix well.  Add your flour mixture to your banana mixture and pour onto a heated griddle or pan.  Flip and enjoy!
