Yummy vegan pancakes!!  My son wanted pancakes this morning, so he went through a few cookbooks and found one in The Joy of Vegan Baking.  This is his version of that recipe.

This was his first attempt at pancakes.  They tasted awesome, but were a bit messy coming out of the pan.  Also check out VEGAN Pancakes II.

VEGAN Pancakes I
1 C whole wheat flour

1 T baking powder

1/4 t salt
1 C almond milk
2 T sunflower oil
3 T pure maple syrup grade B
1 smashed banana
oil/butter for pan**
Combine dry ingredients.  Combine wet ingredients separately.  Add dry to the wet and mix well.  Pour onto heated, prepared skillet or griddle.
**UPDATE – We have found that the pancakes stick a whole lot less when there is no oil/butter added to the pans.  See VEGAN Pancakes II for better results.**
