My son decided that he wanted to make dinner last night.  We received these taco salad pans for Christmas, but had yet to use them.   He whipped these up and made everyone a delicious taco salad in no time.  Not too bad for my nine-year old chef.

VEGAN Taco Salad
Ingredients:
Wheat Tortillas (baked into taco salad shells)
1 bag of frozen corn, cooked
1 tomato, cut into wedges
1 head of Romaine lettuce, sliced
1 block of firm Tofu, drained, crumbled and cooked with taco seasoning (optional)
1 can of salsa of your choice
~He says next time he will add avocado and black beans. 😉
