We have been so busy this summer, I have little time to post anything. I will probably add a “this is what happened in July” and just add all the photos at once. LOL!
Anyway, I have been trying to get the kiddos to eat more zucchini lately. A friend of our gave us three GINORMOUS ones, and we have been making zuccini bread, but I decided to make some zucchini bites last week and they turned out great. They tasted like hashbrowns.
ZUCCHINI BITES
1 C. Zucchini shredded and drained of excess water
1/2 C. applesauce
1/4 yellow onion diced – slightly sauteed
1/4 C. nutritional yeast
1/2 C. whole oats (or rice flour)
1/2 t. garlic powder or other spices as desired
Preheat your oven to 400 degrees. Mix all ingredients well.
We used reusable muffin cups, but if you don’t, just be sure to add some type of oil or the bites may stick to the pan. Fill the cups all the way to the top, as they do not chang! Bake for 15 minutes or until the tops start to turn brown. Enjoy!
We filled the empty muffins spots with water, so it would bake evenly.
